No Bake Superfood Breakfast Bar

Ingredients

  • 1/2 cup Mayver’s Original Super Spread
  • 1/2 cup tightly packed medjool dates or soaked regular dates, seeds removed (approx. 10)
  • 1 Tbsp rice malt syrup
  • 1/2 cup puffed brown rice
  • 1 1/2 cups rolled oats
  • 1/2 cup almond meal
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup dried goji berries or cranberries
  • 1 tsp ground cinnamon

Method

  1. Prepare 20 x 20cm cake tin, spray with oil and line with baking paper or clingwrap so that you are able to easily remove bars once set.
  2. Place dates, rice malt syrup and Mayver’s original food spread in a high powered food processor and blend until a smooth paste forms.
  3. Combine puffed rice, oats, almond meal, pumpkin and sunflower seeds, dried berries and cinnamon in a bowl. Add date mixture and using your hands combine mixture until thoroughly combined.
  4. Press mixture firmly into prepared baking tin, place in fridge for 2 – 4 hours, or overnight, to set. Remove from fridge, cut into slices, wrap individually in plastic wrap and store in fridge or air-tight container.
